These pineapple ice pops with strawberry are a tasty way to cool down on a warm summer's day. Fruity and refreshing, they make an ideal tropical treat for the whole family to enjoy.

There is nothing quite so delicious as a ripe pineapple that is sweet and juicy, with soft and tender flesh that dissolves in your mouth. A ripe pineapple is fragrant and sweet smelling with golden yellow skin.

If you cut into a pineapple before it is fully ripe, the flesh will be firm and unyielding with very little flavour; and if you're like me, the acidity of the underripe pineapple will sting your tongue and cause your taste buds to swell - ouch! For pineapple ice pops, I recommend using the ripest pineapple you can get so that the concentrated fruit flavour comes through when frozen.

So why add strawberry to these pineapple ice pops? We love fresh strawberries, and as they're in season in summer, we maximise our strawberry consumption! I also love the vibrant pop of colour the deep red strawberries lend to the pale yellow pineapple. Using my favourite Zoku ice pop mould, I pour the pineapple and strawberry each down their own side of the mould, so you get both flavours in one bite. :)

These pineapple ice pops with strawberry are a healthy way to stay cool in the summer heat and a popular treat for the children. Using ripened fruit means no added sugar, as the natural fruit sugars provide plenty of sweetness. And the pineapple and strawberry duo packs a punch in vitamin C - great for boosting immunity. But these treats are not just for children - they also benefit, and can be enjoyed by, adults equally, so grab one before they all go!

Here's wha you'll need to make these pineapple ice pops with strawberry:

235g fresh pineapple chunks
65ml freshly squeezed orange juice (~1 extra large orange)
300g strawberries green tops removed

And here's what you'll need to do:

  • Peel and chop the pineapple into small chunks, removing the central core and any seeds.
  • Juice the orange, and remove the green tops from the strawberries.
  • Put the pineapple and orange juice in the jug of a blender, and blitz for a few minutes until liquid and smooth.
  • Blend the strawberries until liquid and smooth. You can either transfer the pineapple blend to another jug and reuse the blender (rinsing in between), or use a handheld immersion blender for the strawberries, which is what I have done.
  • Have both fruit blends to hand.
  • Simultaneously pour the pineapple and strawberry down separate sides of your ice pop moulds, so that it is filled with roughly the same amount of each mixture.
  • Insert the sticks, and put the pops in the freezer to set for at least eight hours or overnight.
  • Serve for a taste of tropical refreshment.
