Mascarpone is a soft Italian cheese with a creamy texture and a tangy flavour. When made into a sweet whipped cream, it transforms into something irresistibly delicious.

According to historians, it was Thomas Wolsey, King Henry VIII's trusted advisor, who first served the snack at a banquet in 1509, and he would also frequently serve it to spectators alongside his own tennis courts. Strawberries and cream then made its first appearance at Wimbledon in 1877, and the tradition has endured since then to become ever more popular today.

Here's what you'll need to make this strawberries and cream recipe:

400g fresh strawberries

For the easy whipped mascarpone cream
250g mascarpone
20ml milk
20g icing sugar, sifted
1 tsp vanilla extract

And here's what you'll need to do:

  • Start by making the whipped mascarpone cream.
  • Put the mascarpone into a medium mixing bowl.
  • Add the milk, and whisk briefly with a balloon whisk to loosen.
  • Sift the icing sugar, and add it to the bowl.
  • Whisk until combined.
  • Add the vanilla extract, and whisk again.
  • Scrape down the sides of the bowl using a soft spatula.
  • Use the cream as is, or fill a piping bag. If the cream is too soft, pop it in the fridge for a few minutes to firm up.
  • Set the cream aside while you rinse the strawberries, and remove the green tops. If the strawberries are large, you can slice them into smaller pieces.
  • Place a few strawberries in the a glass tumbler or coupe, then layer with some of whipped mascarpone cream.
  • Repeat, alternating strawberry and cream layers, finishing with strawberries on top.
  • Serve as an afternoon snack or summer dessert!
