These marshmallow Rice Krispies treats are, as you would expect, loaded with marshmallows for extra gooeyness and are completely moriesh to eat - once you start, you can't stop! We love that they are a super quick and easy no bake treat that you can make on a whim.

Marshmallow Rice Krispies

Rice Krispies treats were a childhood favourite of mine, so making these for my children was a nostalgic trip down memory lane. But the treats I ate as a child never had enough goo factor, and so these marshmallow Rice Krispies treats were born, complete with extra gooeyness.

No one really needs a recipe for marshmallow Rice Krispies treats, as they are so easy to make that my children can do it by themselves. But getting the proportions of marshmallows to Rice Krispies to butter correct is important for ensuring the proper gooey texture, as is using the freshest ingredients and the softest marshmallows.

You'll want to melt the marshmallows and butter gently over a low heat, and stop when the marshmallow are liquid and just melted. If you continue melting, the sugars will harden, and you'll end up with crunchy treats. You could even remove the marshmallow from heat before they have fully liquidised, thus leaving a few marshmallow pockets in your treats for added gooeyness.

Rice Krispies Treats

I used actual Kelloggs Rice Krispies cereal for these marshmallow Rice Krispies treats, but feel free to use your preferred brand of puffed rice cereal - it will work equally well and still taste great! And although the treats taste best when eaten on the same day, it is possible to store them in an airtight container for up to three days. Make sure the container is airtight, or your treats will lose their gooey texture very quickly.

Rice Krispies Treats

Here's what you'll need to make these marshmallow Rice Krispies treats:

200g fresh marshmallows
60g unsalted butter
120g Rice Krispies
1/2 tsp vanilla extract

And here's what you'll need to do:

  • Gather together all the ingredients.
  • Line a 20cm (8in) square tin with a strip of parchment paper, overhung at opposite ends for easy removal.
  • In a medium saucepan, heat the butter and marshmallows together over medium low heat until just melted and liquid, stirring frequently to combine.
  • Remove the pan from heat, and stir in the vanilla extract.
  • Add the Rice Krispies, and stir gently until well coated. Be gentle, or you will crush the Rice Krispies!
  • Transfer the mixture to the prepared tin, easing it carefully into the corners and edges.
  • Gently smooth the top with the spatula, without pressing down too hard and compacting the Rice Krispies mixture.
  • Allow it to cool completely before removing from the tin and cutting into squares to serve.
