Homemade ice pops are one of the easiest ways to beat the heat, and here we share our recipe using two of our favourite flavours - mango and strawberry. Not only is the flavour combination a winner, but the bold and vibrant colour combination demands summer sunshine!

The key to getting homemade ice pops to actually taste of the fruit its made with is to use ripe and flavourful fruit in concentrated amounts. I've used Alphonso mangoes in the recipe below, and if you're lucky enough to be able to get some, they really are one of the sweetest and most flavourful mangoes out there. As for the strawberries, it's hard to do better than a British strawberry when they're in season - succulent and sweet.

I love summer treats for their ease and simplicity, and ice pops are one of my favourites. Freezing treats made from natural ingredients is a lot less effort than baking something involving multiple ingredients, and it is certainly a lot less heat producing - a welcome result for all of us on a hot summer's day.

You can choose to layer the flavours of your homemade ice pops either horizontally or vertically. I've gone for vertically here using my favourite Zoku ice pop mould, so you get a taste of mango and strawberry with each bite.

And if you have children who are at all reluctant about eating enough fruit in their diet, these mango and strawberry homemade ice pops provide the perfect solution - everything tastes better when frozen on a lolly stick! You might also feel better knowing that these have no added sugar.

Here's what you'll need to make these homemade ice pops:

250g ripe mango flesh
85ml freshly squeezed orange juice
300g fresh strawberries, tops removed

And here's what you'll need to do:

  •  Peel and chop the mango flesh, and place it in the jug of your blender.
  • Juice your oranges, and add the juice to the mango.
  • Blend until the mixture is smooth and uniform in consistency.
  • Pour the mango mixture into a separate jug, and set aside. Rinse the blender jug clean of any mango residue.
  • Cut the green tops off the strawberries, and add them to the clean blender jug.
  • Blend until the strawberries become liquid and smooth. If your strawberries are a bit tart, you can add some honey to sweeten.
  • Remove the jug from the blender, and have both the strawberries and mango mixture to hand.
  • With one jug in each hand, pour the mixtures simultaneously into each ice pop mould, with the mango going down one side and the strawberry down the other.
  • Insert the sticks, and pop into the freezer to set for at least eight hours or overnight.
  • Serve when you need a cooling refreshment or a pop of bright colour to cheer you up.

These homemade ice pops with mango and strawberry combine our two favourite flavours into one deliciously refreshing snack!

Ingredients

250g ripe mango flesh
